Founder of Brooklyn Bugs, Joseph is a world leader in entomophagy (eating insects) and insect agriculture. He attended COP27 as Chef Advocate for the United Nations’ International Fund for Agricultural Development (IFAD), and has appeared in articles by the New York Times, the Washington Post, and the Guardian. He recently took to the screen in a Fox News Special — an experience we asked him about today.
