I am not happy when I see a shop with a sign saying “we are cashless”. It excludes a whole group of people (including me now) from going there, and they might not even know because cards are so common.

yeah ditto here. many states/cities in the US have passed laws to ban this discrimination.
sadly, i suspect some businesses are doing this to stop internal theft (think staff skimming the til).
many are franchises so they do not set their own policy. but the smaller ones, i gently let them know ONCE, and then NEVER give them another cent. AND i steer others away whenever i can.
oh and then there's the pressure (and incentives) from the banks. this seems likely to be the driver.. incentives.
