Now, society is slowly opening up -- but we're still far from anything resembling what we're used to prior to COVID-19. So how have restaurants been coping? We took a ride out to the Monarch Diner in Glassboro, New Jersey to talk to the owner, Paul Tsiknakis about what his business looks like right now, the biggest challenges he's facing, and what excites him about the future.
