This week’s Beef Maps X Spaces hit a powerful stride as producers, policy leaders, and platform builders united around a shared mission: decentralizing beef. From ranches in Colorado, Illinois, and Kansas to the policy trenches in South Dakota, the call captured real voices driving real change.
Ranch Mama Shanen and RS “Ruffshot” June hosted the discussion, joined by Joe and Jenny of JZ Meats, Sawyer of Legacy Ranch, Marcy and Matt of Rattlesnake Meats, Anthony Miller of Miller Bison, and Breeauna Sagdal of the I Am Texas Slim Foundation. Together, they mapped out a path away from the Big Four and toward sovereign, local beef—backed by boots-on-the-ground work and a radically different vision of what food should be.
Whether it’s smoked chuck roast, clean burger, or bison short ribs, these producers are redefining what “know your food” really means.
