Chester owns Fudpucker's (www.fudpucker.com) in Destin FL. He started it in 1982 as a snack bar in a nightclub, and today it's a destination in Destin, an institution that has over 300 employees and everything from a retail store to a live alligator park with over 100 gators. I've been to Fudpucker's. It's amazing, and there's no there place like it. Having said that, Chester has to deal with all of the same challenges and hurdles of making an independent restaurant work, and he was kind to share the ups and downs he's faced over early four decades.
