Obsidian is fantastic, I’ve been using it for years. It just uses plain markdown files in folders so your data is yours. It has a massive ecosystem of plugins as well which makes it even better.

Also the paid sync option is using their servers so you don’t need to use iCloud or anything. You can always use dropbox/nextcloud/icloud or whatever to sync your vaults for free. I pay for their own sync function because I like supporting the devs and it allows some more fine grained control over what to sync and what not to.
